For this boozy iced coffee we kick it up a notch with vodka and irish cream.
This summer I have been OBSESSED with iced coffee and iced lattes. I will never understand how people can drink a hot coffee in 90 degree weather. I love my coffee but you won’t see me drinking a hot cup from June-August. I didn’t always like iced coffee. At first the idea of cold coffee creeped me out. I’ve let my warm cup get cold before and didn’t exactly throw my hands up in the air when I tried it. It turns out if it’s cold from the very start it’s not so creepy and it’s actually the perfect wake up call.
When I first started making these iced coffees at home they didn’t have any alcohol in them. Then one night my boyfriend had a twinkle in his eye and asked if he could put vodka in his drink. At first I thought it would be gross. I am the kind of person who doesn’t like to mix milk and alcohol. When I tried it my mouth craved more! Eventually we came up with the idea to replace the milk with Irish cream. We’re pretty good at making excellent decisions.
The most frustrating part of this recipe is waiting for the coffee to cool down. If you have a Trader Joe’s nearby I highly recommend picking up a bottle of their cold brew coffee just for this recipe. Once you try this drink you’ll want more and more. It’s secretly become by boyfriends favorite alcoholic drink but it’s not always the most convenient since we aren’t able to purchase cold brew anywhere around here.
I’ve been making my own cold brew lately but sometimes I forget. When I forget to make cold brew I just go down to the local coffee shop and order up my favorite iced drink. In case you’re wondering… I like sugar free caramel vanilla iced lattes made with skim milk. If you ever want a new best friend buy me one of those.
- 1 1/2 cups strong coffee (cold or room temperature)
- 4 ounces Irish Cream or milk
- 4 ounces Pinnacle Vodka
- 2 tablespoons granulated sugar
- 2 tablespoons caramel sauce
- Combine all ingredients.
- Pour over 3 (16 ounce) glasses filled with ice.
